  • 10 g powdered gelatine
  • 100 g sugar
  • 600 g cream
  • 300 g milk
  • 1 tsp vanilla bean, scraped or vanilla extract

Preparation

  • Weigh 50g of water into a small bowl and sprinkle the gelatin over and stir to mix. Set aside.
  • Put the sugar into TC ProM2.0 bowl and mill for 15 seconds, speed 9.
  • Add 600g cream, 300g milk, and vanilla to the bowl and heat for 4 minutes, 80C, speed 2.
  • Add reserved gelatin mixture and mix for 30 seconds, speed 3.
  • Divide between 6 small molds or ramekins and set in the fridge for 4 hours or overnight.
  • To serve, dip each mold in a bowl of hot water for 3 seconds.
  • Run a thin knife around the edge of each mold and invert the mold onto the center of a small plate. Serve with fresh berries or berry coulis.
  • Great for entertaining dinner guests.
