The silky smooth texture and a subtle hint of vanilla make this a perfect summer treat. It’s a great way to enjoy the flavors of summer with a little something more. Vanilla Panna Cotta is creamy, tangy, and has a hint of sweetness.

- 10 g powdered gelatine
- 100 g sugar
- 600 g cream
- 300 g milk
- 1 tsp vanilla bean, scraped or vanilla extract

Preparation
- Weigh 50g of water into a small bowl and sprinkle the gelatin over and stir to mix. Set aside.
- Put the sugar into TC ProM2.0 bowl and mill for 15 seconds, speed 9.
- Add 600g cream, 300g milk, and vanilla to the bowl and heat for 4 minutes, 80C, speed 2.
- Add reserved gelatin mixture and mix for 30 seconds, speed 3.
- Divide between 6 small molds or ramekins and set in the fridge for 4 hours or overnight.
- To serve, dip each mold in a bowl of hot water for 3 seconds.
- Run a thin knife around the edge of each mold and invert the mold onto the center of a small plate. Serve with fresh berries or berry coulis.
- Great for entertaining dinner guests.
