Peanut Butter Choc Oatmeal Slice

  • 1 cup oats
  • 1 cup almond flour
  • 1 3/4 cup smooth peanut butter
  • 1 cup maple syrup
  • 1 cup coconut oil
  • 1/2 tsp baking soda
  • 1/2 cup cacao powder
  • 1/4 cup coconut sugar
  • 3/4 cup boiling water

Instructions
 

Preparation

  • Preheat the oven to 180C and line an 8” square baking tray.
  • In the stand mixer combine oats, almond flour, smooth peanut butter, maple syrup , coconut oil, and baking soda.
  • Mix on a low speed until combined.
  • Transfer to baking tray and press to flatten.
  • Bake in oven for 25 minutes and let cool.
  • Rinse mixing bowl and begin peanut butter layer by combining 1 1/4 cup smooth peanut butter, 1/4 cup maple syrup, 1/4 cup coconut oil and boiling water.
  • Mix on a low speed until smooth.
  • Transfer over cooked oatmeal slice and place in freezer for 15 minutes.
  • Prepare chocolate ganache by combining 1/2 cup cacao powder, 1/2 cup coconut oil, 1/4 cup coconut sugar and 1/2 cup boiling water in a blender.
  • Pour over peanut butter layer and return to freezer for 1-2 hours or until set.
  • Slice and enjoy.
