Peanut Butter Choc Oatmeal Slice

- 1 cup oats
- 1 cup almond flour
- 1 3/4 cup smooth peanut butter
- 1 cup maple syrup
- 1 cup coconut oil
- 1/2 tsp baking soda
- 1/2 cup cacao powder
- 1/4 cup coconut sugar
- 3/4 cup boiling water

Preparation
- Preheat the oven to 180C and line an 8” square baking tray.
- In the stand mixer combine oats, almond flour, smooth peanut butter, maple syrup , coconut oil, and baking soda.
- Mix on a low speed until combined.
- Transfer to baking tray and press to flatten.
- Bake in oven for 25 minutes and let cool.
- Rinse mixing bowl and begin peanut butter layer by combining 1 1/4 cup smooth peanut butter, 1/4 cup maple syrup, 1/4 cup coconut oil and boiling water.
- Mix on a low speed until smooth.
- Transfer over cooked oatmeal slice and place in freezer for 15 minutes.
- Prepare chocolate ganache by combining 1/2 cup cacao powder, 1/2 cup coconut oil, 1/4 cup coconut sugar and 1/2 cup boiling water in a blender.
- Pour over peanut butter layer and return to freezer for 1-2 hours or until set.
- Slice and enjoy.
