Green Vegetable Soup With Feta

- 2 zucchini
- 1 l water
- 400 g celery
- 200 g broccoli
- 15 g fresh basil
- 15 g parsley
- 2 cubes of stock
- 75 g vegan feta
- salt, pepper
- 1 tbsp oil
- finely chopped almonds
Instructions
Preparation
- Heat oil in a pan. Add zucchini and broccoli, cut into pieces, and sauté them.
- Pour water and stock into the pan. Allow it to boil for 15 minutes.
- Cut celery and add it to the pan. Cook for an additional 10 minutes.
- Coarsely chop basil and parsley.
- Add the fresh herbs to the soup. Season with a pinch of salt and pepper.
- Use a blender to puree the soup until smooth.
- Top it off with crumbled feta cheese, more fresh herbs, and finely chopped almonds for a delightful finish.
