Green Vegetable Soup With Feta

  • 2 zucchini
  • 1 l water⁠
  • 400 g celery⁠
  • 200 g broccoli⁠
  • 15 g fresh basil
  • 15 g parsley⁠
  • 2 cubes of stock⁠
  • 75 g vegan feta⁠
  • salt, pepper
  • 1 tbsp oil
  • finely chopped almonds⁠ ⁠

Instructions
 

Preparation

  • Heat oil in a pan. Add zucchini and broccoli, cut into pieces, and sauté them.
  • Pour water and stock into the pan. Allow it to boil for 15 minutes.
  • Cut celery and add it to the pan. Cook for an additional 10 minutes.
  • Coarsely chop basil and parsley.
  • Add the fresh herbs to the soup. Season with a pinch of salt and pepper.
  • Use a blender to puree the soup until smooth.
  • Top it off with crumbled feta cheese, more fresh herbs, and finely chopped almonds for a delightful finish.
