- 1 3/4 cup gluten free flour
- 3 large ripe bananas
- 1/3 cup coconut sugar
- 1/3 cup melted butter or coconut oil
- 1/4 cup coconut milk
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla bean
- 1/2 tsp salt

Preparation
- Preheat the oven to 180°C (350°F) and prepare a loaf tin by lining it with parchment paper.
- Place the bananas in a stand mixer and mix on medium speed until smooth.
- Add the butter, coconut sugar, and coconut milk to the mixer and continue mixing on medium speed.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, vanilla bean (scraped seeds or extract), and salt.
- Gradually add the dry mixture to the wet ingredients in the mixer, mixing on low to medium speed until well combined.
- Pour the batter into the prepared loaf tin, ensuring it is evenly distributed.
- Arrange sliced bananas on top of the batter, gently pressing them into the mixture.
- Place the tin in the preheated oven and bake for 50 to 55 minutes, or until a toothpick inserted into the centre comes out clean.
- Once baked, remove from the oven and allow the loaf to cool completely before slicing and enjoying.
