  • 1 3/4 cup gluten free flour
  • 3 large ripe bananas
  • 1/3 cup coconut sugar
  • 1/3 cup melted butter or coconut oil
  • 1/4 cup coconut milk
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla bean
  • 1/2 tsp salt

Preparation

  • Preheat the oven to 180°C (350°F) and prepare a loaf tin by lining it with parchment paper.
  • Place the bananas in a stand mixer and mix on medium speed until smooth.
  • Add the butter, coconut sugar, and coconut milk to the mixer and continue mixing on medium speed.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, vanilla bean (scraped seeds or extract), and salt.
  • Gradually add the dry mixture to the wet ingredients in the mixer, mixing on low to medium speed until well combined.
  • Pour the batter into the prepared loaf tin, ensuring it is evenly distributed.
  • Arrange sliced bananas on top of the batter, gently pressing them into the mixture.
  • Place the tin in the preheated oven and bake for 50 to 55 minutes, or until a toothpick inserted into the centre comes out clean.
  • Once baked, remove from the oven and allow the loaf to cool completely before slicing and enjoying.
