Zero Waste Homemade Almond Milk

- 1 cup raw almonds
- 3 cup filtered water
- 1 tbsp Stevia or monk fruit (you can add honey or date)
- 1 tsp vanilla (optional)

Preparation
- Soak 1 cup of almonds in boiling water for 3 hours or overnight.
- Drain and rinse the almonds, then peel off the skins if desired.
- Add all ingredients to a blender and blend on high speed.
- Strain the mixture through a nut milk bag or cheesecloth into a bowl, squeezing out as much milk as possible.
- Transfer the almond milk to a jar or bottle and store it in the fridge for up to 5 days.
- Remember to shake or stir the milk before enjoying it as separation is natural. You can add a spoonful of coconut oil to help keep the nut milk well dispersed.
- Don’t forget to save the leftover pulp to make delicious almond pulp cookies and protein balls.
