Zero Waste Homemade Almond Milk

  • 1 cup raw almonds
  • 3 cup filtered water
  • 1 tbsp Stevia or monk fruit (you can add honey or date)
  • 1 tsp vanilla (optional)

Instructions
 

Preparation

  • Soak 1 cup of almonds in boiling water for 3 hours or overnight.
  • Drain and rinse the almonds, then peel off the skins if desired.
  • Add all ingredients to a blender and blend on high speed.
  • Strain the mixture through a nut milk bag or cheesecloth into a bowl, squeezing out as much milk as possible.
  • Transfer the almond milk to a jar or bottle and store it in the fridge for up to 5 days.
  • Remember to shake or stir the milk before enjoying it as separation is natural. You can add a spoonful of coconut oil to help keep the nut milk well dispersed.
  • Don’t forget to save the leftover pulp to make delicious almond pulp cookies and protein balls.
