Yuzu Lime Curd That You Don't Need To Whisk

- 2 lime zest
- 120 g caster sugar
- 60 g fresh lime juice or puree
- 60 g yuzu juice
- 150 g cubed unsalted butter
- 3-4 whole eggs

Preparation
- Add lime zest and sugar into the Thermocook. Blend the sugar on Speed 7 for 5 seconds and scrape the side of the bowl.
- Add remaining ingredients. Blend the mixture on Speed 7 for 10 seconds and then scrap the side of the bowl.
- Attach the butterfly whisk/stirrer and cook the mixture at 80 C, speed 4 for 12 minutes.
- Carefully pour the curd into an airtight glass container or bowl and make contact with film wrap and let it cool in the fridge overnight.
