Vegan Red Lentil Croquettes

- 130 g red lentils
- 310 g water
- 2 tbsp tomato sauce
- 1/2 tsp dry rosemary
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 tsp salt
- hint of cumin
- pepper

Preparation
- Soak your lentils with boiling water, for at least 2 hours. Rinse and drain.
- Blend lentils at high speed together with the water, tomato paste and spices, blend until you achieve a smooth consistency and everything is well combined.
- Transfer onto a pot and cook on low/medium heat, bring to a boil until the excess water is evaporated.
- When it gets to a dense consistency, keep stirring for 3/4 more minutes without letting it stick to the pan. Then transfer into a glass container, let it cool down.
- Then turn the container upside down onto a chopping board, cut into squares and then divide the squares into triangles.
- Now drizzle a non-stick pan with some olive oil, and once the oil gets hot enough, place your croquettes on the pan, cook on each side until golden. Enjoy!
