Silky Smooth Vegan Pumpkin Pasta

Ingredients

  • 1/2 cup cashews
  • 1 cup pumpkin pure
  • 2 garlic cloves
  • 1 tsp Italian herbs
  • 1/3 cup vegan parmesan
  • 1 pack pasta of your choice
  • roasted pine nuts and fresh thyme, for garnishing

Preparation

  1. Cook pasta according to the package directions.
  2. Drain pasta and reserve half a cup of cooking pasta water.
  3. Into a blender add cashews, pumpkin pure, garlic, vegan parmesan, Italian herbs, and reserved pasta water. Pulse until creamy and smooth.
  4. Stir the sauce into warm pasta and serve garnished with fresh thyme and pine nuts. Enjoy!
