Silky Smooth Vegan Pumpkin Pasta
Ingredients
- 1/2 cup cashews
- 1 cup pumpkin pure
- 2 garlic cloves
- 1 tsp Italian herbs
- 1/3 cup vegan parmesan
- 1 pack pasta of your choice
- roasted pine nuts and fresh thyme, for garnishing
Preparation
- Cook pasta according to the package directions.
- Drain pasta and reserve half a cup of cooking pasta water.
- Into a blender add cashews, pumpkin pure, garlic, vegan parmesan, Italian herbs, and reserved pasta water. Pulse until creamy and smooth.
- Stir the sauce into warm pasta and serve garnished with fresh thyme and pine nuts. Enjoy!
