  • 1/2 cup cashews
  • 1 cup pumpkin pure
  • 2 garlic cloves
  • 1 tsp Italian herbs
  • 1/3 cup vegan parmesan
  • 1 pack pasta of your choice
  • roasted pine nuts and fresh thyme, for garnishing

Instructions
 

Preparation

  • Cook pasta according to the package directions.
  • Drain pasta and reserve half a cup of cooking pasta water.
  • Into a blender add cashews, pumpkin pure, garlic, vegan parmesan, Italian herbs, and reserved pasta water. Pulse until creamy and smooth.
  • Stir the sauce into warm pasta and serve garnished with fresh thyme and pine nuts. Enjoy!
