Vegan Pumpkin Bites

Ingredients for the base

  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1 tbsp coconut oil
  • 1/2 cup medjool dates, pitted
  • 1 pinch sea salt

Ingredients fir the filling

  • 1 cup pumpkin purée
  • 2 tbsp maple syrup
  • 1/4 cup coconut oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 tbsp lemon juice

Preparation

  1. Place the ingredients in your Optimum blender and blend until smooth and creamy.
  2. Once the base mixture is well blended, remove it from the blender and transfer it to a bowl.
  3. Take the silicon moulds and press the base mixture into them, making sure to spread it evenly.
  4. After pressing the mixture into the moulds, place them in the refrigerator and let them chill until firm. This will usually take about 1-2 hours.
  5. While the base is chilling, prepare your desired filling or topping for your treats. You can use ingredients like fruits, nuts, or shredded coconut.
  6. Once the base is firm and ready, remove it from the refrigerator and pour your desired filling or topping on top. Spread it evenly over the base.
  7. Return the moulds with the filling to the refrigerator and let them chill until the filling is perfectly set. This may take another 1-2 hours.
  8. When the treats are set, remove them from the moulds and place them on a serving plate.
  9. To add extra flavour and texture, decorate the treats with your favourite toppings. Sprinkle chopped walnuts, shredded coconut, and goji berries over the top.
  10. Your easy homemade treats are now ready to be enjoyed! Serve them as a delicious and nutritious dessert or snack.
