Vegan Pumpkin Bites
Ingredients
Ingredients for the base
- 1/2 cup walnuts
- 1/2 cup almonds
- 1 tbsp coconut oil
- 1/2 cup medjool dates, pitted
- 1 pinch sea salt
Ingredients fir the filling
- 1 cup pumpkin purée
- 2 tbsp maple syrup
- 1/4 cup coconut oil
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1 tbsp lemon juice
Instructions
Preparation
- Place the ingredients in your Optimum blender and blend until smooth and creamy.
- Once the base mixture is well blended, remove it from the blender and transfer it to a bowl.
- Take the silicon moulds and press the base mixture into them, making sure to spread it evenly.
- After pressing the mixture into the moulds, place them in the refrigerator and let them chill until firm. This will usually take about 1-2 hours.
- While the base is chilling, prepare your desired filling or topping for your treats. You can use ingredients like fruits, nuts, or shredded coconut.
- Once the base is firm and ready, remove it from the refrigerator and pour your desired filling or topping on top. Spread it evenly over the base.
- Return the moulds with the filling to the refrigerator and let them chill until the filling is perfectly set. This may take another 1-2 hours.
- When the treats are set, remove them from the moulds and place them on a serving plate.
- To add extra flavour and texture, decorate the treats with your favourite toppings. Sprinkle chopped walnuts, shredded coconut, and goji berries over the top.
- Your easy homemade treats are now ready to be enjoyed! Serve them as a delicious and nutritious dessert or snack.
