Vegan Oreo Chunk Cookies

- 1 cup plain flour
- 120 g vegan butter - softened
- 2/3 cup brown sugar
- 1/2 cup caster sugar
- 1 1/2 tsp vanilla extract
- 1 vegan egg
- 1/2 tsp baking powder
- 1/4 tsp sea salt
- 200 g Oreo (1 1/2 packs) - crushed into chunks

Preparation
- Preheat your oven to 180C fan-forced.
- Add the brown sugar, caster sugar, vegan butter, and vanilla to a mixing bowl and whisk for 2 minutes.
- Make your vegan egg by mixing the tapioca with 2 tbsp of water in a small dish. Mix with your finger to ensure there are no clumps then whisk that into the mixture.
- Once the ‘egg’ is whisked through, mix in the baking soda, flour, and salt then fold through the crushed Oreos.
- Roll into 40 - 45g balls (weighing them helps keep them all the same size). If you want the extra oreo’s on top for aesthetics, then break up your spare 2 - 3 Oreos and poke them into the balls.
- Bake for 13 - 15 minutes then allow to cool and enjoy!
