Vegan Oreo Chunk Cookies

  • 1 cup plain flour
  • 120 g vegan butter - softened
  • 2/3 cup brown sugar
  • 1/2 cup caster sugar
  • 1 1/2 tsp vanilla extract
  • 1 vegan egg
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 200 g Oreo (1 1/2 packs) - crushed into chunks



  • Preheat your oven to 180C fan-forced.
  • Add the brown sugar, caster sugar, vegan butter, and vanilla to a mixing bowl and whisk for 2 minutes.
  • Make your vegan egg by mixing the tapioca with 2 tbsp of water in a small dish. Mix with your finger to ensure there are no clumps then whisk that into the mixture.
  • Once the ‘egg’ is whisked through, mix in the baking soda, flour, and salt then fold through the crushed Oreos.
  • Roll into 40 - 45g balls (weighing them helps keep them all the same size). If you want the extra oreo’s on top for aesthetics, then break up your spare 2 - 3 Oreos and poke them into the balls.
  • Bake for 13 - 15 minutes then allow to cool and enjoy!
