Vegan Creamy Red Pepper Pasta

  • 500 g orzo pasta
  • 2 red capsicum
  • 1 brown onion
  • 6 garlic cloves
  • 2 tbsp tomato paste
  • 1/2 cup nutritional yeast
  • 3/4 cup raw cashews
  • 1 l chicken style stock
  • 2-4 cup water
  • 1/2 lemon zest
  • 1/2 lemon juice
  • salt, pepper

Instructions
 

Preparation

  • Boil the cashews for 15 minutes then drain and set aside (or soak them in cold water overnight).
  • Bring a wide deep pan to medium heat with a dash of olive oil then sauté the onions for 5 minutes with a big pinch of salt and pepper, add the tomato paste and sauté for a further 3 minutes.
  • Add the capsicum and garlic, turn the heat to high and fry until the capsicum begins to char.
  • Transfer the mixture to a high-speed blender with the cashews, nutritional yeast and stock and blend for 1 minute or until super smooth.
  • Bring the same pan you were using before to medium heat with some more olive oil then add the orzo. Mix well so all the orzo is covered in oil and let toast for 2 minutes.
  • Add the blended sauce to the orzo, stir well and add 1 cup of water at a time until the pasta is cooked (will take about 15 mins).
  • Season with extra salt, pepper and lemon zest and juice.
  • Serve with some fresh herbs, extra nutritional yeast and chilli.
