Vegan Beetroot Pasta Recipe

- 3 beetroots, peeled and boiled
- 1 tsp smoked paprika
- 1 tsp salt
- 1 garlic clove
- juice of 1/2 lemon
- 1/2 can coconut milk
- pasta of your choice
- fresh basil leaves
- vegan feta cheese
Instructions
Preparation
- In a blender, combine the boiled beetroots, smoked paprika, salt, garlic, lemon juice, and coconut milk. Blend until smooth.
- Cook the pasta of your choice in salted water until al dente.
- Drain the pasta, reserving some of the pasta water. Mix the pasta with the beetroot sauce, and add the reserved pasta water to thin out the sauce to your desired consistency.
- Garnish the dish with fresh basil leaves and crumbled vegan feta cheese.
- Serve and enjoy the delicious flavours and vibrant colours of this vegan beetroot pasta dish.
