  • 80 g oatmeal
  • 1 banana
  • 1 tbsp chia seeds
  • 100 g vegetable quark/yogurt
  • 100 ml plant-based milk
  • cinnamon
  • 1 tbsp maple syrup (optional)
  • vanilla

Toppings Ingredients

  • 2 dates
  • 2 tbsp peanut butter
  • 2 tbsp plant-based milk
  • 1 tsp vanilla extract
  • 1 tbsp peanuts
  • 2 tbsp dark chocolate

Preparation

  • Make the overnight oats the night before In a coverable container, mix all the ingredients for the overnight oats together: the oatmeal, banana, chia seeds, vegetable curd/yogurt, milk, cinnamon, and optionally the vanilla or maple syrup. I always do this in a bowl and 'mash' the banana through it.
  • Put the overnight oats in the fridge while you prepare the rest.
  • For the caramel layer, mix the dates, peanut butter, vegetable milk, and vanilla extract in a blender until smooth.
  • Take two glasses and divide the overnight oats over them.
  • Then divide the caramel layer over the two glasses.
  • Sprinkle the two glasses with a tablespoon of peanuts.
  • Melt the dark chocolate and divide it over the overnight oats so that they are completely covered. Place in the fridge overnight.
  • Take them out of the fridge in the morning, finish with some raspberries and/or extra peanuts and your breakfast is ready.
