  • 4 tomatoes
  • 300 g strawberries
  • 2 tbsp raspberry vinegar
  • 1 tbsp caster sugar
  • salt, pepper
  • drizzle of olive oil

Instructions
 

Preparation

  • Blanch tomatoes with boiling water and peel the skin.
  • Add peeled tomatoes and strawberries into a blender and blend until smooth.
  • Add seasoning give it a good stir and refrigerate for at least 2 hours.
  • Serve with toasted pine nuts, basil leaves, and a drizzle of olive oil.
