Tomato and Strawberry Soup

- 4 tomatoes
- 300 g strawberries
- 2 tbsp raspberry vinegar
- 1 tbsp caster sugar
- salt, pepper
- drizzle of olive oil
Instructions
Preparation
- Blanch tomatoes with boiling water and peel the skin.
- Add peeled tomatoes and strawberries into a blender and blend until smooth.
- Add seasoning give it a good stir and refrigerate for at least 2 hours.
- Serve with toasted pine nuts, basil leaves, and a drizzle of olive oil.
