Summer Pasta Salad With Herb Dressing
Ingredients
- 400 g fresh made penne pasta
- 100 g green beans, trimmed
- 1 large red capsicum, thinly sliced
- 2 tbsp pine nuts, toasted
- 2 spring onions, finely chopped
- 1 lebanese cucumber, halved, sliced
- 250 g cherry tomatoes, halved
- 1/3 cup chopped fresh herbs
- 1/4 cup olive oil
- 1 tbsp white wine vinegar
- 2 tsp mustard
- 1 tbsp pure cream
Preparation
- Using slicing attachments, thinly slice capsicum and cucumber and set them aside.
- Make fresh penne pasta as per pasta-making instructions. Cook in a large pot of boiling water for 3-6 minutes until tender, adding beans for the last 3 minutes of cooking. Drain and transfer to a bowl to cool.
- Make the dressing: place herbs, oil, vinegar, mustard, and cream into a screw-top jar. Secure lid and shake to combine.
- Add capsicum, pine nuts, spring onion, cucumber, tomato, and dressing to the pasta mixture. Season with salt and pepper. Toss to combine. Serve.
