Simple Mushroom Risotto

  • 40 g parmesan cheese, crust removed, cut into cubes
  • 1 brown onion, quartered
  • 40 g butter
  • 40 g olive oil
  • 320 g arborio rice
  • 60 g dry white wine
  • 2 tbsp vegetable stock powder
  • 250 g mushrooms, cut into slices
  • 720 g water

Instructions
 

Preparation

  • Place parmesan cheese into the TC bowl and grate for 10 seconds, speed 9. Transfer to a bowl and set aside. Clean and dry the mixing bowl.
  • Place onion into the mixing bowl and chop for 3 seconds, speed 5. Scrape down the sides of the mixing bowl with a spatula.
  • Add butter and olive oil and saute for 3 minutes, 120C, speed 1.
  • Insert butterfly tool. Add the risotto rice and saute for 1 minute, 120C, reverse speed 2.
  • Add white wine and saute for 2 minutes, 100C, reverse speed 2. Scrape the bottom of the mixing bowl well with a spatula to loosen the rice.
  • Add 1-2 tbsp vegetable stock powder, sliced mushrooms, and water, scraping the bottom again to loosen the rice. Cook for 13 minutes, 100C, reverse speed 2, placing the simmering basket on the lid instead of the measuring cup.
  • Transfer to a large bowl or dish and using the spatula combine with reserved parmesan. cover the dish and set it aside for a few minutes to thicken.
  • Serve with a side salad.

    1. Hey Anne-Marie. If you have an older version of the Thermocook you should have a blade cover which you need to put on at this point and use speed 1 or 2, the blade cover comes with the Thermocook Pro M, if you use just speed 1 without the blade cover, the rice is likely to be rather mushy. Hope this helps.
