Roasted Veggies Pizza Sauce

- 3 tomatoes
- 3 small colourful bell peppers (red, green, yellow)
- 3 red onions
- handful of garlic gloves
- olive oil
- oregano
- salt, pepper

Preparation
- Pre-heat the oven to 200°C/180°C fan forced.
- Cut veggies into pieces. Line the baking tray with paper.
- Place the veg in a single layer on a large roasting tin.
- Pour over the oil, sprinkle over the dried herbs, season generously with salt and pepper and mix until everything is well coated.
- Roast for 20 minutes.
- Add cooled veggies into a blender and blend until smooth.
- Spread sauce on the pizza dough.
- Add your favourite topping and enjoy!
