Roasted Sweet Potato Hummus

- 150 g chickpeas
- 200 g sweet potato, peeled and chopped
- 4 garlic cloves
- 1/3 cup tahini
- 1 tsp cumin
- juice of half a lemon
- 1 tsp sea salt flakes
- 1/2 cup water
Instructions
Preparation
- Preheat oven to 200C.
- Wrap the garlic in some foil then place on a lined baking tray with the sweet potato and bake for 30 minutes or until the sweet potato is soft.
- Remove the skin from the roasted garlic and add to a blender with the sweet potato and the rest of the ingredients and blend until super smooth.
- Top with a drizzle of olive oil and some paprika. Enjoy!
