Roasted Sweet Potato Hummus

Ingredients

  • 150 g chickpeas
  • 200 g sweet potato, peeled and chopped
  • 4 garlic cloves
  • 1/3 cup tahini
  • 1 tsp cumin
  • juice of half a lemon
  • 1 tsp sea salt flakes
  • 1/2 cup water

Preparation

  1. Preheat oven to 200C.
  2. Wrap the garlic in some foil then place on a lined baking tray with the sweet potato and bake for 30 minutes or until the sweet potato is soft.
  3. Remove the skin from the roasted garlic and add to a blender with the sweet potato and the rest of the ingredients and blend until super smooth.
  4. Top with a drizzle of olive oil and some paprika. Enjoy!
