  • 1/2 cup unsweetened shredded coconut or walnuts
  • 2-3 cup medjool dates, pitted
  • 1-2 cup dried mulberries
  • 4 cup frozen wild blueberries, thawed
  • 3-4 bananas
  • 1 tbsp maple syrup or raw honey (optional)

Instructions
 

Preparation

  • For the crust, process the medjool dates, dried mulberries, and shredded coconut or walnuts (if using) in a food processor until thoroughly combined and smooth.
  • Using wet hands, place the mixture in a 9” pie dish or individual mini pie ramekins and press evenly on the bottom and up the sides.
  • Slice 1-2 bananas and arrange on top of the crust. Place in the fridge until needed.

For the filling

  • Combine the wild blueberries, 1 banana, and maple syrup (or raw honey) in the food processor (or blender) and blend until smooth.
  • Pour the mixture into the pie crust and top with the remaining whole wild blueberries. Set in the refrigerator overnight, or in the freezer for 2-3 hours. Enjoy!
