Raw Chocolate Mousse Pie
Ingredients
Base Ingredients
- 1 cup cashews, soaked for one hour and drained
- 1/4 cup dates, pitted
Mousse Ingredients
- 1 large ripe avocado
- 1 tbsp cacao powder
- 3/4 cup dates, pitted
- 1/4 cup coconut magic
- coconut oil

Preparation
- For the base, blitz all ingredients in your Optimum high-speed blender until you get a buttery consistency. Press firmly and level into a dish greased with some coconut oil.
- For the mousse, blitz all ingredients in your Optimum high-speed blender. Pour on top of the base and level out. Cover and pop in fridge or freezer to set. Slice and serve with yogurt and berries.
