Raw Cashew Yoghurt

Ingredients

  • 1 cup cashews
  • 1/2 cup water
  • 3 tbsp shredded coconut
  • 1 1/2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract
  • 1 pinch sea salt
  • 1/3 cup coconut oil

Preparation

  1. Place all ingredients into your Optimum high-speed blender. Blend until it reaches
    a thin yogurt-style consistency.
  2. There should be absolutely no grittiness or chunks of anything left.
  3. Transfer into a bowl and refrigerate for at least 2 hours. You now have raw yogurt!
  4. Always store your raw yogurt in the fridge.
