  • 15 g fresh ginger
  • 50 ml olive oil
  • salt
  • 4 shallot
  • 1 kg rabbit saddle
  • 20 g lemongrass
  • 400 ml veal stock
  • 4 tbsp corn flour
  • 100 ml lime juice

Instructions
 

Preparation

  • Peel the shallots and ginger, then cut the lemongrass into thin slices. Add the ginger, shallots, and lemongrass to the Thermocook bowl and blend at a speed of 10 for 1 minute.
  • Remove the blade assembly and attach the butterfly tool.
  • Add the olive oil and let it stew at 120°C for 5 minutes.
  • Add the rabbit, lime juice, veal stock, and cornflour. Season with salt and let it cook at 95°C for 45 minutes. Serve it with some rice.
