Quinoa Salad is a famous dish that has been enjoyed for centuries by many people throughout the world. It’s an excellent nutritional choice, and it contains protein to make you feel full longer as well. It’s great as an appetizer or side dish to any kind of dinner main course.
Quinoa Salad

- 400 g quinoa
- 1 tbsp vegetable stock powder
- 900 g water
- 3 garlic cloves
- 0.5 red onion
- 1 bunch fresh parsley
- 1 bunch fresh coriander
- 1 punnet cherry tomatoes
- 1 small red capsicum
- 0.5 lemon - juice
- 1 tbsp orange juice
- 1 tbsp tamari soy sauce
- 1 lime - juice
- 20 g olive oil
- 1 fresh chilli to taste
- 1 piece fresh ginger

- Thoroughly rinse 400g quinoa or soak for 30 minutes. Add 900g of water and 1 tbsp vegetable stock to TC ProM2.0 bowl. Pour quinoa into the small steaming basket and place it into the bowl. Set temperature to 120C, 18 minutes, speed 2.
- When cooked, tip the remaining water out of the bowl and allow the quinoa to cool down. Place quinoa into a bowl and put it in the fridge to cool.
- Place 3 garlic cloves and 1/2 a red onion, handful of parsley and coriander, knob of ginger, and 1 chili, deseeded and quartered, into the TC ProM2.0 bowl and chop for 3 seconds, speed 7. Scrape down the sides of the bowl with a spatula and repeat. Place into the bowl with the quinoa.
- Do not rinse the bowl. To make the dressing, add 20g olive oil, juice of half a lime and half a lemon, 1 tbsp orange juice, and 1 tbsp tamari soy sauce into the TC ProM2.0 bowl and mix for 10 seconds, speed 6.
- Chop the cherry tomatoes in half and dice the capsicum and put it on top of the quinoa salad. Mix the dressing through when ready to serve.
- Serve with shredded chicken or grilled salmon for meat lovers.
- Chilli can be omitted if not to your liking.
- Quinoa can be made ahead of time.
