  • 800 g pumpkin
  • 2 medium red onions
  • 1 garlic clove
  • 1 cup vegetable stock
  • 100 ml heavy cream

Instructions
 

Preparation

  • Preheat the oven to 200 degrees Celsius.
  • Roast the Pumpkin, onions and garlic. Remove the skin after the pumpkin is totally roasted.
  • Let cool a bit and then place the ingredients in your Optimum 9400X and blend on high or choose the M1 program to obtain the smoothest texture.
  • Add the heavy cream and blend again but at low speed.
  • Serve hot in a pumpkin and garnish with croutons.
