  • 1 banana
  • 100 g oatmeal
  • 1 tbsp almonds
  • 1 tbsp agave syrup/maple syrup
  • 1 tsp vanilla extract
  • 1 pinch cinnamon
  • 1 pinch salt

Filling

  • 100 g pumpkin puree
  • 100 g dates
  • 100 g soy quark
  • 1 tbsp almond paste
  • 1 tbsp vanilla extract
  • fresh figs, almond shavings, grated coconut

Instructions
 

Preparation

  • Preheat the oven to 180 degrees.
  • Finely chop the almonds and mix with the oatmeal and a pinch of cinnamon.
  • Mash the banana in a bowl and mix it with the agave syrup and vanilla extract.
  • Then add the oatmeal mixture to the banana and mix until well.
  • Grease 4 small baking tins with some butter or oil and divide the mixture over them. Press these well on the bottom and make sure they get a raised edge.
  • Bake the bottoms in the oven for about 20 minutes. Let them cool down.

Make the filling

  • In a food processor or blender, mix the pumpkin puree, dates, almond paste, vanilla extract add cinnamon into a paste (if your dates are a bit dry soak them in warm water for about 10 minutes and then drain)
  • Once the bottoms have cooled down, divide the pumpkin caramel over the four tarts.
  • Then divide the soy quark over the tarts. Finish with some fresh figs (or other fresh fruit), toasted almond shavings, and grated coconut
