Potato Cauliflower Mash

- 4-5 medium-sized potatoes, peeled and roughly chopped
- 1 small head of cauliflower, cut into large florets
- 2 tbsp garlic
- 2 tbsp onion
- 1 tbsp chopped chives, parsley, or green onions, to serve
- 1/2 tsp paprika, to serve
Instructions
Preparation
- Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes and cauliflower florets in the basket, cover, and steam for 15-20 minutes, until both are very tender.
- Remove the potatoes and cauliflower and place them in a blender. Add the cooked garlic and onion. Blend until smooth.
- Serve topped with chives, parsley, green onions, and paprika.
