Potato Cauliflower Mash

Ingredients

  • 4-5 medium-sized potatoes, peeled and roughly chopped
  • 1 small head of cauliflower, cut into large florets
  • 2 tbsp garlic
  • 2 tbsp onion
  • 1 tbsp chopped chives, parsley, or green onions, to serve
  • 1/2 tsp paprika, to serve

Preparation

  1. Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes and cauliflower florets in the basket, cover, and steam for 15-20 minutes, until both are very tender.
  2. Remove the potatoes and cauliflower and place them in a blender. Add the cooked garlic and onion. Blend until smooth.
  3. Serve topped with chives, parsley, green onions, and paprika.
