Pistachio and Carrot Spread

- 300 g carrots, peeled, boiled and cooled
- 150 g unsalted pistachios, shelled
- 1/2 cup low-fat yoghurt
- 1 tsp dried sage
- cracked black pepper, to taste
Instructions
Preparation
- Rough chop the carrots and add to your Optimum high-speed blender along with the other ingredients and purée to smooth consistency.
- Serve with crisp bread or fresh vegetables.
