  • 300 g carrots, peeled, boiled and cooled
  • 150 g unsalted pistachios, shelled
  • 1/2 cup low-fat yoghurt
  • 1 tsp dried sage
  • cracked black pepper, to taste

Instructions
 

Preparation

  • Rough chop the carrots and add to your Optimum high-speed blender along with the other ingredients and purée to smooth consistency.
  • Serve with crisp bread or fresh vegetables.
