Pistachio and Carrot Spread is so easy to make and it tastes so good that you won’t want to stop eating it! This spread is a combination of two delicious flavours: pistachio and carrot. It’s a match made in dessert heaven, and you won’t believe how good this spread really is until you try it.

Pistachio and Carrot Spread

Ingredients

  • 300 g carrots, peeled, boiled and cooled
  • 150 g unsalted pistachios, shelled
  • 1/2 cup low-fat yoghurt
  • 1 tsp dried sage
  • cracked black pepper, to taste

Preparation

  1. Rough chop the carrots and add to your Optimum high-speed blender along with
    the other ingredients and purée to smooth consistency.
  2. Serve with crisp bread or fresh vegetables.
