- 400 g pistachios (shelled)
- 50 g erythritol
- 60 g protein powder
- 1 can coconut milk

Preparation
- Preheat your oven to 180°C (350°F).
- Spread the shelled pistachios onto a baking tray and roast them for 10-12 minutes, or until they turn golden brown.
- Let the pistachios cool down for a few minutes before adding them to a food processor.
- Pulse the pistachios until they become a smooth and creamy paste.
- Add the Erythritol and protein powder to the food processor and pulse again until they are well combined with the pistachio paste.
- Pour the can of coconut milk into the food processor and blend everything together until it is smooth and creamy.
- Pour the mixture into ice cream moulds and freeze.
