Only 4 Ingredient Vegan Ice Cream

  • 400 g pistachios (shelled)
  • 50 g erythritol
  • 60 g protein powder
  • 1 can coconut milk



  • Preheat your oven to 180°C (350°F).
  • Spread the shelled pistachios onto a baking tray and roast them for 10-12 minutes, or until they turn golden brown.
  • Let the pistachios cool down for a few minutes before adding them to a food processor.
  • Pulse the pistachios until they become a smooth and creamy paste.
  • Add the Erythritol and protein powder to the food processor and pulse again until they are well combined with the pistachio paste.
  • Pour the can of coconut milk into the food processor and blend everything together until it is smooth and creamy.
  • Pour the mixture into ice cream moulds and freeze.
  • Enjoy!
