No-Bake Muesli Bars – Healthy Snack Ideas

Ingredients

  • 2 cup medjool dates
  • 3/4 cup rolled oats
  • 1/2 cup peanut butter (or any nut/seed butter)
  • 1/3 cup sunflower seeds
  • 1/4 cup cranberries

Preparation

  1. Start by blending together the peanut butter, dates, and oats in the blender or food processor until a paste-like consistency is formed. If the mixture is too dry, add a splash of water or milk to help it come together.
  2. Once the mixture is smooth and creamy, transfer it to a mixing bowl.
  3. Next, chop up the sunflower seeds and cranberries into small pieces and add them to the mixing bowl with the peanut butter and date mixture. Stir everything together until well combined.
  4. Take a baking tray and line it with parchment paper. Transfer the mixture to the tray and use a spatula to press it down firmly and evenly, making sure it reaches all the edges and corners.
  5. Place the tray in the fridge and leave it to chill for at least 2 hours, or overnight if possible, to allow the mixture to set.
  6. Once the muesli bars have been set, remove them from the fridge and cut them into even-sized bars or squares using a sharp knife.
  7. Serve and enjoy your delicious and healthy no-bake muesli bars as a snack or breakfast on the go!
