  • 2 cup medjool dates
  • 3/4 cup rolled oats
  • 1/2 cup peanut butter (or any nut/seed butter)
  • 1/3 cup sunflower seeds
  • 1/4 cup cranberries

Preparation

  • Start by blending together the peanut butter, dates, and oats in the blender or food processor until a paste-like consistency is formed. If the mixture is too dry, add a splash of water or milk to help it come together.
  • Once the mixture is smooth and creamy, transfer it to a mixing bowl.
  • Next, chop up the sunflower seeds and cranberries into small pieces and add them to the mixing bowl with the peanut butter and date mixture. Stir everything together until well combined.
  • Take a baking tray and line it with parchment paper. Transfer the mixture to the tray and use a spatula to press it down firmly and evenly, making sure it reaches all the edges and corners.
  • Place the tray in the fridge and leave it to chill for at least 2 hours, or overnight if possible, to allow the mixture to set.
  • Once the muesli bars have been set, remove them from the fridge and cut them into even-sized bars or squares using a sharp knife.
  • Serve and enjoy your delicious and healthy no-bake muesli bars as a snack or breakfast on the go!
