No Bake Fresh Strawberry Cheesecake
Ingredients
Ingredients for the crust
- 250 g cookies
- 70 g melted butter
Ingredients for cheesecake
- 500 g strawberries
- 4 tbsp agave syrup or honey
- 1 cup sweet cream
- 1 cup skyr
- 24 g gelatine
- juice from 1/2 lemon
Instructions
Preparation
- Add butter and cookies into a blender and blend together.
- Place the mixture on the bottom of a pan with a diameter of 24 cm. Put in the fridge.
- To prepare gelatine cover the gelatine with cold water, let it swell for 10 minutes, and then heat until dissolved. Do not boil!
- Add all ingredients for the cheesecake (except gelatine) into a blender and blend until smooth.
- Add gelatine and blend again.
- Pour on the bottom of the cookie base, add 200 g of chopped strawberries and refrigerate for a few hours or all night.
- Top with more strawberries before serving.
