Mushroom Stock Paste

Ingredients

  • 20 g dried mixed forest mushrooms
  • 400 ml hot water
  • 1 tbsp olive oil
  • 280 g brown onions chopped
  • 260 g carrots chopped
  • 600 g mushrooms chopped
  • 1 tbsp salt
  • 2 sprigs fresh thyme

Preparation

  1. Add dried mushrooms to a mixing bowl with hot water and soak for 20 mins.
  2. Chopped onion and carrot (this can be done at the same time) and mushrooms and chop for 5 sec/speed 5 or more times if required.
  3. Add thyme and cook for 60mins/100°/speed 2.
  4. Scrape down the sides of the mixing bowl with a spatula and allow it time to cool, then blend for 10 seconds/speed 6 (or higher speed for smaller pieces).
  5. Transfer to a sealable jar/container.
