Mushroom Stock Paste

- 20 g dried mixed forest mushrooms
- 400 ml hot water
- 1 tbsp olive oil
- 280 g brown onions chopped
- 260 g carrots chopped
- 600 g mushrooms chopped
- 1 tbsp salt
- 2 sprigs fresh thyme

Preparation
- Add dried mushrooms to a mixing bowl with hot water and soak for 20 mins.
- Chopped onion and carrot (this can be done at the same time) and mushrooms and chop for 5 sec/speed 5 or more times if required.
- Add thyme and cook for 60mins/100°/speed 2.
- Scrape down the sides of the mixing bowl with a spatula and allow it time to cool, then blend for 10 seconds/speed 6 (or higher speed for smaller pieces).
- Transfer to a sealable jar/container.
