
Moist Vegan Chocolate Chip Pumpkin Bread

- 200 g oatmeal
- 50 g almond flour
- 3 bananas
- 200 g pumpkin puree
- 100 g dates
- 80 ml vegetable milk
- 1 tbsp apple cider vinegar
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp pumpkin spice herbs or gingerbread spices
- 1/2 tsp baking soda
- 50 g pecans
- 50 g chocolate chips

Preparation
- Preheat the oven to 180 degrees.
- Mix the oat flour with the almond flour, cinnamon, pumpkin spice herbs, baking powder and baking soda in a bowl.
- In a blender, place the bananas, dates, pumpkin puree, vegetable milk, apple cider vinegar and vanilla extract. Blend this until smooth.
- Now add the liquid pumpkin mixture to the dry ingredients. Mix this into a cohesive batter.
- Cut the pecan nuts into pieces and add them to the batter together with the chocolate chips. Stir this through the batter.
- Cover a baking shape with baking paper and pour the batter into it. Put in the oven for about 50 minutes and then let it cool.
