Base Ingredients

  • 1 cup almonds
  • 1 cup soft dates
  • 1/4 cup shredded coconut
  • 1 tsp pure vanilla

Almond fudge Ingredients

  • 1/4 cup coconut butter*
  • 1/4 cup raw almond butter
  • 1/4 tsp coconut Magic
  • coconut nectar

Icing Ingredients

  • 1 cup soft dates
  • 1/4 cup of Coconut Magic
  • coconut oil
  • 1/4 cup cacao powder
  • 1 tsp pure vanilla



  • Place all the base ingredients in your Optimum high-speed blender and process until the mixture holds together. (Add a teaspoon of water if needed).
  • Press a tbs of mixture into muffin tins. Clean your Optimum high-speed blender and blend together the ingredients for the ‘almond fudge’ until well blended. Add mixture to your bases and clean the blender. Place ‘chocolate icing’ ingredients into Optimum high-speed blender and blend until smooth. Spread icing over cupcakes. Place in the freezer to set. * Not to be confused with coconut oil.
