  • 2 x 425 g tins sliced mango in light syrup
  • 1 tbsp lime juice
  • 100 g caster sugar
  • 250 ml orange juice
  • 6 leaves gelatine

Instructions
 

Preparation

  • Empty the contents (fruit and juice) of the mango tins into your Optimum high-speed blender and pulse until smooth. Add the lime juice, and pulse to combine. Soak the gelatine leaves in water for 5 minutes.
  • Meanwhile, put the orange juice and sugar in a saucepan and heat until the sugar has dissolved and it is just gently simmering. Squeeze excess water from the gelatine leaves and add to the pan.
  • Allow to dissolve and stir gently. Add the mango mixture to the liquid and stir well. Place all the liquid in a large bowl, jelly mold, or individual serving bowls. Leave in the fridge to set for around 12 hours.
  • Enjoy!
