Lentil Soup
Ingredients

- 1 tbsp groundnut oil
- 1 medium onion, peeled and diced
- 2 cloves garlic, peeled and crushed
- 2 tsp cumin seeds
- 2 sticks celery, chopped
- 2 medium carrots, peeled and chopped
- 1 tbsp tomato purée
- 1 tsp coriander
- 4 cup (1l) vegetable stock
- 150 g red lentils
- salt and black pepper, to taste

- Heat the oil in a large heavy-based saucepan. Add the onion and sweat for a few minutes. Add the cumin seeds and cook for a further 10 minutes, stirring occasionally. Add the garlic, celery, and carrots. Sweat for a couple of minutes.
- Add the stock. Stir in the tomato purée and coriander. Add the lentils. Stir, bring to the boil, and then simmer gently for 30 minutes.
- Place in your Optimum high-speed blender and blend until smooth. Re-heat and season with salt and black pepper to taste. Serve with some crusty bread.
