Ingredients

  • 1 cup water
  • 2/3 cup erythritol (or 1/2 cup xylatol)
  • 3 tbsp gelatin
  • 2 tsp vanilla essence
  • 2 tsp salted caramel flavouring/essence (optional, you can just use vanilla)
  • 1/4 tsp cream of tartar (optional)

Instructions
 

Preparation

  • Mill erythritol - top speed 15 seconds.
  • Add water and gelatine to erythritol. Set to - 60c / 140f - Speed 3 - 3 min & 30 sec.
  • Add vanilla, caramel essences, and cream of tartar. Set to - 10 min - Speed 5 Then Set to - 10 min - speed 4.
  • Pour into lined slice tray (I used what I have - a loaf tin ) Set in the freezer for 30 min.
  • Ideas: Use on top of homemade cookies (wait for the cookies to cool before topping with marshmallow mix). Roll in melted chocolate (chocolate should be as cool as possible but still workable 35-40c/95f - 105f ).
