How to make vegan protein pancakes easy

Ingredients

  • 1 apple
  • 1 cup plant milk
  • 2 medjool dates
  • 1/3 cup hemp hearts
  • 1 cup buckwheat flour
  • 3 tbsp chickpea flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 pinch salt
  • 1/4 cup hemp oil
  • 1 tbsp oil of your choice

Preparation

  1. Prepare the ingredients. Cut the apple into quarters and remove the core.
  2. In a blender, add the apple, plant milk, Medjool dates, hemp hearts, buckwheat flour, chickpea flour, baking powder, cinnamon, salt, and hemp oil. Blend until smooth for approximately 1 minute. Let the mixture sit for 5 minutes to thicken.
  3. Heat a large frying pan to medium and add a teaspoon of oil of your choice (e.g. avocado oil). Pour approximately 1/4 cup of the mixture per pancake and fry until golden, about 2 minutes. Flip and fry for another 2 minutes. Repeat with the remaining mixture.
  4. Serve the pancakes topped with your favourite fruit, compote, jam, or maple syrup.
  5. Enjoy your delicious and protein-packed vegan pancakes!
