How to make vegan protein pancakes easy

- 1 apple
- 1 cup plant milk
- 2 medjool dates
- 1/3 cup hemp hearts
- 1 cup buckwheat flour
- 3 tbsp chickpea flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 pinch salt
- 1/4 cup hemp oil
- 1 tbsp oil of your choice

Preparation
- Prepare the ingredients. Cut the apple into quarters and remove the core.
- In a blender, add the apple, plant milk, Medjool dates, hemp hearts, buckwheat flour, chickpea flour, baking powder, cinnamon, salt, and hemp oil. Blend until smooth for approximately 1 minute. Let the mixture sit for 5 minutes to thicken.
- Heat a large frying pan to medium and add a teaspoon of oil of your choice (e.g. avocado oil). Pour approximately 1/4 cup of the mixture per pancake and fry until golden, about 2 minutes. Flip and fry for another 2 minutes. Repeat with the remaining mixture.
- Serve the pancakes topped with your favourite fruit, compote, jam, or maple syrup.
