Homemade Boba Pearls

- 45 g brown sugar
- 65 g water
- 90 g tapioca flour + for dusting

- In your Optimum ThermoCook ProM 2.0, place water, with brown sugar, set the timer to 5 minutes, and speed 2 on reverse at 90 degrees Celsius.
- Add tapioca flour to your mixture (you may need an extra tablespoon) and choose the kneading option that's already saved in the ThermoCook.
- After your dough is ready, put some tapioca to dust your table and make the pearls.
- Cook pearls in boiling water for 20-30 minutes.
- Melt your brown sugar in the frying pan and add cooked boba pearls.
- Enjoy!
