Healthy Vegan Mac & Cheese

- 250 g potatoes
- 100 g sweet potatoes
- 2 carrots
- 1/2 red bell pepper
- 35 g cashew nuts (soaked)
- 40 g yeast flakes
- 1 pickled jalapeño
- 1 tsp garlic powder
- 2-3 tbsp lemon juice
- 1 tsp vinegar
- 100 ml water
- salt, pepper
- 175 g spelled macaroni
Instructions
Preparation
- Peel potatoes, sweet potatoes, carrots and steam for 20min.
- In the meantime, cook the macaroni in a saucepan.
- Add all ingredients into a blender and puree finely.
- Mix the pasta with the 'cheese sauce' and serve with fresh chives.
