Healthy Cottage Cheese Pasta Alfredo Recipe

Ingredients

  • 3/4 cup cottage cheese
  • 3/4 cup milk
  • 1 tsp arrowroot powder (or cornstarch)
  • 1/2 tsp salt
  • 1/2 cup shredded parmesan cheese
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 8 oz cooked pasta
  • shrimp ( or protein source of your choice )

Preparation

  1. In a blender, combine the cottage cheese, milk, arrowroot powder (or cornstarch), and salt. Blend at high speed until the mixture is smooth and well combined.
  2. Pour the blended mixture into a saucepan and place it over low to medium heat.
  3. Add the dried oregano, dried basil, and shredded Parmesan cheese to the saucepan. You can also add your chosen protein source at this point, such as cooked shrimp.
  4. Simmer the mixture in the saucepan, stirring occasionally, until it slightly thickens. This should take a few minutes.
  5. While the sauce is simmering, cook the pasta according to the package instructions. For example, if you’re using Banza pasta, cook it until al dente.
  6. Once the pasta is cooked, drain it and transfer it to a large bowl.
  7. Pour the Alfredo sauce over the cooked pasta in the bowl. Make sure to coat all the noodles thoroughly with the sauce.
  8. Toss the pasta and sauce together, ensuring that all the noodles are sufficiently covered with the Alfredo sauce.
  9. Serve the healthy shrimp pasta Alfredo immediately, and enjoy your delicious and nutritious meal!
