Healthy Cottage Cheese Pasta Alfredo Recipe

  • 3/4 cup cottage cheese
  • 3/4 cup milk
  • 1 tsp arrowroot powder (or cornstarch)
  • 1/2 tsp salt
  • 1/2 cup shredded parmesan cheese
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 8 oz cooked pasta
  • shrimp ( or protein source of your choice )

Preparation

  • In a blender, combine the cottage cheese, milk, arrowroot powder (or cornstarch), and salt. Blend at high speed until the mixture is smooth and well combined.
  • Pour the blended mixture into a saucepan and place it over low to medium heat.
  • Add the dried oregano, dried basil, and shredded Parmesan cheese to the saucepan. You can also add your chosen protein source at this point, such as cooked shrimp.
  • Simmer the mixture in the saucepan, stirring occasionally, until it slightly thickens. This should take a few minutes.
  • While the sauce is simmering, cook the pasta according to the package instructions. For example, if you're using Banza pasta, cook it until al dente.
  • Once the pasta is cooked, drain it and transfer it to a large bowl.
  • Pour the Alfredo sauce over the cooked pasta in the bowl. Make sure to coat all the noodles thoroughly with the sauce.
  • Toss the pasta and sauce together, ensuring that all the noodles are sufficiently covered with the Alfredo sauce.
  • Serve the healthy shrimp pasta Alfredo immediately, and enjoy your delicious and nutritious meal!
