Healthy Pumpkin and Carrots Croquettes

Ingredients

  • 320 g pumpkin, peeled and chopped
  • 100 g carrots, peeled and grated
  • 300 g chickpea flour
  • 1 tsp nutmeg
  • salt to taste (optional)
  • cheese, cut into small cubes (optional)
  • 2 egg whites, beaten
  • 1 cup bread crumbs or cornflakes, crushed

Preparation

  1. In a blender, mix the pumpkin, carrots, chickpea flour, nutmeg, and salt (if using) until smooth.
  2. Refrigerate the mixture for 2 hours to help it firm up and make it easier to mould.
  3. Once the mixture has chilled, take a small amount of it and shape it into a ball. Make a hole in the centre and fill it with a cube of cheese (if using). Close the ball around the cheese and flatten it into a disk.
  4. Dip the disk into the beaten egg white and then coat it with the bread crumbs or cornflakes.
  5. Heat oil in a frying pan over medium heat. Once the oil is hot, carefully place the fritters in the pan and fry them until golden brown on both sides.
  6. Once done, remove the fritters from the pan and place them on paper towels to absorb any excess oil.
  7. Serve the fritters hot with your favourite dipping sauce or chutney.
  8. Enjoy these flavorful and healthy fritters as a snack or as a side dish to any meal!
