Healthy Pumpkin and Carrots Croquettes

- 320 g pumpkin, peeled and chopped
- 100 g carrots, peeled and grated
- 300 g chickpea flour
- 1 tsp nutmeg
- salt to taste (optional)
- cheese, cut into small cubes (optional)
- 2 egg whites, beaten
- 1 cup bread crumbs or cornflakes, crushed

- In a blender, mix the pumpkin, carrots, chickpea flour, nutmeg, and salt (if using) until smooth.
- Refrigerate the mixture for 2 hours to help it firm up and make it easier to mould.
- Once the mixture has chilled, take a small amount of it and shape it into a ball. Make a hole in the centre and fill it with a cube of cheese (if using). Close the ball around the cheese and flatten it into a disk.
- Dip the disk into the beaten egg white and then coat it with the bread crumbs or cornflakes.
- Heat oil in a frying pan over medium heat. Once the oil is hot, carefully place the fritters in the pan and fry them until golden brown on both sides.
- Once done, remove the fritters from the pan and place them on paper towels to absorb any excess oil.
- Serve the fritters hot with your favourite dipping sauce or chutney.
- Enjoy these flavorful and healthy fritters as a snack or as a side dish to any meal!
