- 1/2 cup low fat cottage cheese
- 2/3 cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 1 egg
- 2 tbsp maple syrup
- 1/4 cup blueberries

Preparation
- Preheat your oven to 325°F (162°C) and grease a ramekin with cooking spray or butter.
- In a high-speed blender, add cottage cheese, Greek yogurt, vanilla protein powder, egg, and maple syrup.
- Blend the ingredients until you have a smooth mixture.
- Add in the blueberries and pulse a few times, just enough to break them up and distribute them evenly throughout the mixture.
- Pour the mixture into the greased ramekin.
- Place the ramekin in the preheated oven and bake for approximately 20 minutes or until golden around the edges.
- Once the cheesecake is done, remove it from the oven and let it cool for a few minutes.
- Transfer the ramekin to the refrigerator and let the cheesecake set for a few hours or overnight.
- Once the cheesecake has been set, remove it from the refrigerator and add some more blueberries and crushed ginger cookies on top as a garnish.
- Serve and enjoy your healthy and delicious protein cheesecake!
