Healthy Chocolate Zucchini Baked Oats

  • 60 g oatmeal
  • 200 ml plant-based milk
  • 1 banana
  • 1/3 piece of zucchini
  • 2 tbsp cocoa powder
  • 1 tbsp vegan protein blend chocolate
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 tsp maple syrup
  • 1 tsp baking powder
  • 2 tbsp dark chocolate chips
  • 50 g vegetable curd
  • 1 pinch cinnamon
  • 1 pinch salt

Topping

  • strawberries, blackberries, almond shavings, grated coconut

Instructions
 

Preparation

  • Preheat the oven to 180 degrees.
  • Put the oatmeal in a blender together with the plant-based milk, protein powder, cocoa powder, banana, zucchini, chia seeds, baking powder, vanilla extract, maple syrup, cinnamon and a pinch of salt.
  • Blend this until smooth. Then stir 1 tbsp chocolate chips through the batter.
  • Use an oven dish and add half of the batter to it. Now add the vegetable curd and then pour the rest of the batter over it. Divide the other tbsp chocolate chips over the top.
  • Place the dish in the oven for about 20 minutes.
  • Finish with some leftover banana slices, strawberries, blackberries, almond shavings and grated coconut.
