  • 400 g zucchini
  • 185 g shrimp
  • 200 g tomatoes ⁠⁠
  • 30 g vegan feta
  • arugula ⁠to taste⁠⁠
  • pine nuts
  • 1 avocado
  • 1 tbsp lime juice ⁠⁠
  • 65 g vegetable yoghurt
  • pepper and salt ⁠⁠
  • garlic and red onion

Instructions
 

Preparation

  • If you want to add onion or garlic, first fry them briefly in a pan. Then add shrimp with salt and pepper to taste.
  • Make the sauce by putting avocado, lime juice, yoghurt and pepper in a blender or with an immersion blender.⁠⁠
  • Add the zucchini and chopped tomatoes to the shrimp and after 2 minutes also the avocado sauce. Mix well.⁠⁠⁠⁠
  • Divide the zucchini over 2 plates and top with arugula, pine nuts and vegan feta.
