Healthy Avocado Pasta

- 400 g zucchini
- 185 g shrimp
- 200 g tomatoes
- 30 g vegan feta
- arugula to taste
- pine nuts
- 1 avocado
- 1 tbsp lime juice
- 65 g vegetable yoghurt
- pepper and salt
- garlic and red onion

Preparation
- If you want to add onion or garlic, first fry them briefly in a pan. Then add shrimp with salt and pepper to taste.
- Make the sauce by putting avocado, lime juice, yoghurt and pepper in a blender or with an immersion blender.
- Add the zucchini and chopped tomatoes to the shrimp and after 2 minutes also the avocado sauce. Mix well.
- Divide the zucchini over 2 plates and top with arugula, pine nuts and vegan feta.
