Ingredients
  

Ingredients for the tofu

  • 1 block tofu, pad dry & cubed
  • 2 tbsp cornstarch
  • 3 tbsp nutritional yeast
  • 1 tsp garam masala
  • 1/2 tsp paprika powder

Ingredients for the curry

  • 400 g spinach
  • 1/2 cup veggie broth
  • 1 white onion, diced
  • 1 ginger piece, minced
  • 4 garlic cloves, minced
  • 1 tsp garam masala
  • 1 tsp paprika powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander

Toppings

  • fresh parsley
  • soy yoghurt
  • hemp seeds
  • chili flakes

Instructions
 

Preparation

  • In a bowl, combine the tofu cubes with cornstarch, nutritional yeast, garam masala, and paprika powder. Mix until the tofu is evenly coated.
  • Heat some oil in a skillet over medium heat. Add the coated tofu cubes and fry until they turn golden brown and crispy. Set aside.
  • Place the spinach and vegetable broth in a blender, and blend until you achieve a smooth consistency.
  • In the same skillet, add a little more oil and sauté the diced onion, minced ginger, and minced garlic until they become fragrant.
  • Add garam masala, paprika powder, turmeric, cumin, and coriander to the skillet. Toast the spices for about 30 seconds to enhance their flavours.
  • Pour the spinach sauce into the skillet and add the crispy tofu cubes. Allow the mixture to simmer for approximately 5 minutes, allowing the flavours to blend.
  • Remove from heat and serve the Palak Paneer curry. Enhance the dish by topping it with fresh parsley, a dollop of soy yogurt, a sprinkle of hemp seeds, and chilli flakes for some added heat.
  • Sit back, savour each bite, and relish the delightful combination of flavours in this healthy and tasty Palak Paneer dish.
