Healthy and Delicious Pumpkin Muffins

Ingredients

  • 3 cup spelt flour type 630
  • 1/2 cup raw cane sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1 tsp apple cider vinegar
  • 1 cup peeled cooked Hokkaido pumpkin
  • 1/3 cup maple syrup
  • 1/2 cup melted vegan butter
  • 1 cup plant milk

Preparation

  1. In a blender, combine all the dry ingredients and mix thoroughly.
  2. In a blender, combine all the wet ingredients and blend until well mixed. Pour the mixture into a bowl.
  3. Slowly add the dry mix to the liquid one while stirring continuously, until you achieve a creamy batter consistency.
  4. Preheat your oven to 170°C (340°F).
  5. Grease a muffin tin or line it with paper liners for easy removal.
  6. Carefully pour the batter into each muffin cup, filling them about 3/4 full.
  7. Bake for approximately 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Note that baking time may vary depending on your oven, so keep an eye on them.
  8. Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, you can decorate the muffins according to your preference. Get creative with frosting, glazes, or toppings of your choice.
  10. Enjoy these delicious homemade muffins as a delightful treat or a snack any time of the day!
