Healthy and Delicious Pumpkin Muffins

- 3 cup spelt flour type 630
- 1/2 cup raw cane sugar
- 3 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp pumpkin pie spice
- 1 tsp apple cider vinegar
- 1 cup peeled cooked Hokkaido pumpkin
- 1/3 cup maple syrup
- 1/2 cup melted vegan butter
- 1 cup plant milk

- In a blender, combine all the dry ingredients and mix thoroughly.
- In a blender, combine all the wet ingredients and blend until well mixed. Pour the mixture into a bowl.
- Slowly add the dry mix to the liquid one while stirring continuously, until you achieve a creamy batter consistency.
- Preheat your oven to 170°C (340°F).
- Grease a muffin tin or line it with paper liners for easy removal.
- Carefully pour the batter into each muffin cup, filling them about 3/4 full.
- Bake for approximately 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Note that baking time may vary depending on your oven, so keep an eye on them.
- Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, you can decorate the muffins according to your preference. Get creative with frosting, glazes, or toppings of your choice.
