Green Rice Shaped Pasta Recipe (Orzo pasta)

- 200 g orzo
- 200 g broccoli
- 250 g kale
- 150 g parmesan cheese
- 1 lemon
- 100 ml milk or cream
- 1 shallot
- 1 garlic clove
- 1 tbsp green pesto
- chilli flakes to taste
- pepper and sea salt
- olive oil
Instructions
Preparation
- Bring a pan of water to a boil and cook the orzo according to package directions. Collect half a cup of cooking liquid by draining!
- Grate the zest of the lemon. Put the lemon zest together with the juice of 1/2 lemon, the kale, shallot, garlic, milk/cooking cream and a good pinch of salt and pepper in the blender. Blend to a smooth sauce.
- Pour the sauce into a greased pan and heat. Then add 100 g Parmesan cheese, pesto, juice from the other half of the lemon and some chilli flakes. Stir well.
- Add the orzo together with the cooking liquid and a pinch of pepper. Let it simmer gently.
- Meanwhile, heat some oil in a frying pan and stir-fry the broccoli with a pinch of salt and pepper for a few minutes until crisp.
- Serve the orzo with the broccoli and remaining Parmesan cheese. Garnish with additional chilli flakes.
