Green Broccoli Pasta Recipe

Ingredients

  • 300 g pasta of your choice
  • 500 g broccoli
  • 1 bulb of garlic
  • 1 onion
  • 100 g feta
  • handful of basil
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 150 g cherry tomatoes

Preparation

  1. Preheat the oven to 200 degrees.
  2. Cut off the top of the garlic and drizzle with olive oil. Put in the oven for about 30 minutes.
  3. Place the tomatoes on a baking tray lined with baking paper and drizzle with some olive oil. Roast the tomatoes for about 15 minutes.
  4. Cut the onion into rings. Heat a pan on the stove with a dash of oil and caramelize the onion on low heat. Stir occasionally and prepare the rest in the meantime. At the end add a small knob of butter and salt.
  5. Clean the broccoli and cut it into florets. Cook for about 5 minutes until the broccoli is soft. Cook the pasta as directed on the package, reserving 2-3 tablespoons of the pasta water.
  6. Blend the cooked broccoli with the basil, roasted garlic, lemon juice, feta, 2 tablespoons of pasta water, salt and pepper until smooth.
  7. Add the sauce to the caramelized onion, followed by some pasta water and the cooked pasta. Heat this up for a while.
  8. Finish the pasta with roasted tomatoes, extra feta and pine nuts.
  9. Enjoy!
