Green Broccoli Pasta Recipe

- 300 g pasta of your choice
- 500 g broccoli
- 1 bulb of garlic
- 1 onion
- 100 g feta
- handful of basil
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp butter
- 150 g cherry tomatoes

Preparation
- Preheat the oven to 200 degrees.
- Cut off the top of the garlic and drizzle with olive oil. Put in the oven for about 30 minutes.
- Place the tomatoes on a baking tray lined with baking paper and drizzle with some olive oil. Roast the tomatoes for about 15 minutes.
- Cut the onion into rings. Heat a pan on the stove with a dash of oil and caramelize the onion on low heat. Stir occasionally and prepare the rest in the meantime. At the end add a small knob of butter and salt.
- Clean the broccoli and cut it into florets. Cook for about 5 minutes until the broccoli is soft. Cook the pasta as directed on the package, reserving 2-3 tablespoons of the pasta water.
- Blend the cooked broccoli with the basil, roasted garlic, lemon juice, feta, 2 tablespoons of pasta water, salt and pepper until smooth.
- Add the sauce to the caramelized onion, followed by some pasta water and the cooked pasta. Heat this up for a while.
- Finish the pasta with roasted tomatoes, extra feta and pine nuts.
