- 120 g brown sugar
- 125 g butter
- 3 egg yolks
- 1 orange, zested

- Place rice flour, brown sugar, butter cut into small pieces, egg yolks, and orange zest into TC ProM2.0 bowl and mix for 3 minutes, speed 8.
- If needed, use the spatula to push the mixture towards the center and blend again for 30 seconds, speed 8.
- Wrap the dough in cling film and chill in the fridge for 60 minutes.
- Preheat oven to 180C. Using a rolling pin, roll out the dough, and use a cookie cutter to cut your shortbread.
- Place onto a baking tray lined with parchment paper and bake for 15 minutes.
