  • 200 g rice flour
  • 120 g brown sugar
  • 125 g butter
  • 3 egg yolks
  • 1 orange, zested

Preparation

  • Place rice flour, brown sugar, butter cut into small pieces, egg yolks, and orange zest into TC ProM2.0 bowl and mix for 3 minutes, speed 8.
  • If needed, use the spatula to push the mixture towards the center and blend again for 30 seconds, speed 8.
  • Wrap the dough in cling film and chill in the fridge for 60 minutes.
  • Preheat oven to 180C. Using a rolling pin, roll out the dough, and use a cookie cutter to cut your shortbread.
  • Place onto a baking tray lined with parchment paper and bake for 15 minutes.
  • Great Christmas gift idea. Reducing sugar makes a more palatable tasty treat.
