  • 520 ml lukewarm water
  • 80 ml oil
  • 3 eggs
  • 1 tsp white vinegar
  • 300 g white rice flour
  • 150 g brown rice flour
  • 70 g besan or soy flour
  • 150 g arrowroot
  • 1 tbsp xanthan gum
  • 2 tsp gluten substitute
  • 3 tsp sugar
  • 1 1/2 tsp salt
  • 3 tsp instant yeast

Preparation

  • Place the first 4 ingredients into the baking pan in the order listed.
  • Combine remaining ingredients in a large bowl; mix well then transfer into the baking pan and wipe any spills from outside of the pan. Insert the bread pan into position in the baking chamber and close the lid. Insert the bread pan into position in the baking chamber and close the lid.
  • Press MENU to choose GLUTEN FREE.
  • Choose LOAF SIZE 1kg.
  • Press START | CANCEL to commence the cycle.
  • When the beeper alerts you that the fruit and nut dispenser has opened its lid – DO NOT turn the bread maker off; use a plastic spatula and carefully scrape down sides of the tin, mix in the same direction as the blade turning until ingredients are well combined, replace the lid and continue with the cycle.
  • After the cycle has been completed press START | CANCEL to stop the KEEP WARM setting.
  • Using oven mitts, remove bread from the bread maker. Allow bread to rest in the pan for 5 minutes before turning out to cool on a wire rack.
